Café - Choc - Grilled note and several properties

The Café-choc is a maillardised yest extract in a micro granulated powder form which is totally soluble. It does not contain salt, added fat or sugar. Café-Choc is a flavour enhancer that develops a characteristic coffee / chocolate / grilled / roasted note for dosage levels around 0,3 to 0,6 %. Used at low dosage (0,1 to 0,3 %) in savory or sweet preparations, it colors beverages, sauces, Flavours mix, stuffing, ... without any impact on the aromatic profile. The Café-Choc is also used as a caramel and coloring agent substitute

Why use Café - Choc ?

 

- Labelled as "flavour" or "process falvor"

- Low usage level : 5 to 15 g/kg of final product, according to the waiting effect

- Healthy ingredient : does not contain salt, added fat or sugar but is rich in proteins

- Allow to reduce formulation costs : 1% of Café-Choc can replace up to 10 to 15 % of cacao or coffee

- Brings an intense coloration

- Increase the tastes and coffee, chocolate/grilled/roasted/toffee notes (flavour enhancer)
